“铁公鸡”是我国语言大师老舍先生1935年夏赠给远香斋魏氏熏鸡的誉号。由聊城魏兆松始创于清嘉庆十五年(1810),驰名于道光二十年(1840)前后。因当年运河水陆交通便利,得以畅销省内外。制作时,选用外形丰满、肉多肥嫩、体重1至1.5公斤的当年生无病活鸡,先加工成扒鸡,再向腹内装入丁香、八角、桂皮、茴香等药料,放在锯末(木屑)烟头上熏制。经熏制的扒鸡色泽栗红,水分少,皮缩裂,肉外露,无弹性,药香浓,肉嫩骨酥,原汁原味,肉质梗韧,香而不腻,嚼后有余香,四季皆宜食。吃时泡洗蒸透,顺丝撕食。可存1年左右不变质。堪称上等美肴和馈赠佳品。
